Mornings around here start very early with my hubby walking out the door by 4AM. Coming up with a hearty and healthy breakfast each morning was a little challenging since he wanted something he could eat in the car while driving. Initially I made him an egg burrito since he could eat it one handed, but the salsa made it a little messy in the car, and he wanted something a little healthier. I looked for different recipes but really didn't have a lot of luck finding something I could make ahead, was hearty, healthy, and warm. There are a lot of oatmeal recipes that include yogurt, but winter required something warm and comforting, so I decided to modify what I found and eventually came up with the perfect recipe for us. Here is what you need:
2-cup mason jar(s) Steel cut oats (not quick oats) Brown sugar Milk Berries of any kind (optional) Directions: Pour 1 cup of oats into each mason jar using the mason jar measuring lines, then top off with milk to the 1 1/2 cup line on the jar. Add 1 teaspoon of brown sugar (you can substitute honey for a healthier version). Cover with lid, shake, and place in the refrigerator. In the morning, grab the jar and heat in microwave for 1 minute (be sure to remove lid). Mix in desired type of berries after heated. My husband loves blueberries, but blackberries, raspberries, and strawberries, are all great options. He uses about a 1/4 cup of berries, but modify to fit your fancy. You can even add nuts if you'd like. Replace lid and head out the door, enjoying as soon as you're ready! This recipe is also great for teens on the go, working mothers, or if you are assisting taking care of elderly and concerned they aren't always eating right. Quick, easy, hearty, healthy, and perfect to make multiples for the week. I make 5 every Sunday evening so they are ready for my husband to grab throughout the work week. Enjoy!
