Nothing says fall is here more than a nice warm bowl of soup of a crisp day. Fall is definitely my favorite cooking season, and I'm excited to share a very easy recipe you can make in 15 minutes before you walk out the door for the day, then come home to an amazing smell, with dinner ready in an easy 20 minutes.
Ingredients: 2 boneless chicken breasts by 1 chopped onion 1 stalk of celery chopped 1 bag of baby carrots 2 teaspoons of Lawrys Seasoning Salt 8 cups of chicken broth 1 cup of rice Throw all these ingredients in a slow cooker, and cook on low for 4-6 hours if chicken is thawed, 6-8 hours on high if chicken is frozen. This recipe is completely flexible! Want more carrots? Less onions? Prefer peas over celery? Change it up however you like! The proportions of the vegetables are totally up to you! When you get home: Melt 5 Tablespoons of butter in a sauce pan over medium heat to create a thickening agent. Stir in 1 cup flour and 2 cups milk. Stir constantly over medium heat until it's smooth and begins to thicken, dump cream in the slow cooker. Let it cook while you throw some bread in the oven. It will be ready when the bread is, about 15-20 minutes. That's it! A hearty and cozy meal that will become a family favorite during those chilly months! Want more fall recipes? Chicken and rice go really well together, I think this is because of the fact that rice does not really taste anything. I am not saying this because I do not like rice, on the contrary, I love them. When I lived in Japan, I tried out many cuisines, what struck me really fascinating was that almost all of them had rice in it. It was really interesting that so many dishes can be prepared with rice, and all of which are amazing.
